We need inspiration for quick and healthy recipes while we are away from home. It’s difficult enough to make nutritious meals and snacks at home 7 days a week. Especially when cooking and menus are as far away from your every day train of thought as the Moon is. It’s going to be more of a challenge overseas!
Plans for this trip have already changed a thousand times. At first, we were just going to visit Disney World Orlando for a few weeks after Europe before returning to South Africa. It has now changed into a full-fledged three-month long road trip and we want to see as much of this amazing country as we can.

She will share her stories and experience involving art, crafts, and museums as our family travel and explore the world. She will contribute to this category in her own unique and creative way. We’ll need to focus on our family health while on the go. Staying healthy is important especially when traveling. This year we want to put words into action. Healthy food look and sound amazing, but will our children eat it and will we find it everywhere we go?
Getting ready to travel with three children is not for the faint of heart. I’ve researched travel gear and what to pack quite a bit. I’ve always been fascinated with our family history. My grandfather, Oupa Nick, was the best storyteller I know. I could listen to him all day telling us how naughty they were and how much fun they had during tough times.
Our children love animals, but Matt, our oldest, has a special love for birds. We are all new to birding. Matt will drive our mission to explore the world of birds with his own thoughts, photos, videos and posts as part of his homeschool assignments.
