We need inspiration for quick and healthy recipes while we are away from home.  It’s difficult enough to make nutritious meals and snacks at home 7 days a week.  Especially when cooking and menus are as far away from your every day train of thought as the Moon is.   It’s going to be more of a challenge overseas!


Our good friend, Derek, treated us to Moroccan style lamb pot and with it he served these delicious stuffed peppers.  I loved how easy they were to prepare and how fresh and juicy the raw peppers tasted with the cous-cous and cheeses.  I definately want to remember this one.


  • Courgette Cous Cous
  • Peppers (roasted or raw)
  • Tomato
  • Fetta Cheese
  • Cheddar Cheese
  • Fresh mint
  • Fresh Lime
  • Almond Flakes
  • A drizzle of olive oil and black pepper to season
