It’s difficult enough to make nutritious meals and snacks at home 7 days a week. Especially when cooking and menus are as far away from your every day train of thought as the Moon is. It’s going to be more of a challenge overseas!
DEREK’S STUFFED PEPPERS (Moroccan style)
Our good friend, Derek, treated us to Moroccan style lamb pot and with it he served these delicious stuffed peppers. I loved how easy they were to prepare and how fresh and juicy the raw peppers tasted with the cous-cous and cheeses. I definately want to remember this one.
- Courgette Cous Cous
- Peppers (roasted or raw)
- Fetta Cheese
- Cheddar Cheese
- Fresh mint
- Fresh Lime
- Almond Flakes
- A drizzle of olive oil and black pepper to season
